Apium graveolens


Known and appreciated since Antiquity, celery stalks and leaves don’t like to be cooked and are often eaten raw. On the other hand, the seeds are fairly rich in essence and - unlike those of coriander - have much the same aromas as the rest of the plant.

Celery is a biennial plant and you have to wait for the second year to harvest the seeds and do the extraction.
