A graduate of the Ecole Hôtelière de Strasbourg, Arnaud Lallement studied with great names of French cuisine, like Roger Vergé, Michel Guérard, one of the oldest 3-star chefs in France, and Alain Chapel. At just 26 years old, he joined his father to run L'Assiette Champenoise, the family-run restaurant. Passionately committed to his work, he won his first Michelin star one year later. In 2003, Arnaud was the youngest chef chosen by Alain Ducasse to present his work at the Plaza Athénée in Paris for the Fou-Food France event. In 2005, L'Assiette won its second star and expanded. Arnaud works there with his wife Magali, his mother Colette and his sister Melanie. In 2009, the restaurant was named “establishment of the year” by the Gault & Millau guide, which awarded it a fourth toque in 2010. At the time, L'Assiette Champenoise was celebrating its 35th anniversary and ten years of collaboration between Arnaud Lallement and Olivier Krug. In 2014, it was awarded its third Michelin star. Arnaud is convinced that a chef's cuisine must reflect his genetic makeup. When he's cooking, he never forgets where he comes from, where he is now and who he's cooking for.
