Chef of Mirazur, Menton, France, 2 Michelin stars
Of Italian-Argentine origin, Mauro Colagreco chose cooking as a means of expression. He worked with Bernard Loiseau, Alain Passard and Alain Ducasse before becoming the chef and head of the Mirazur restaurant in Menton. Mauro quickly rose to fame: he was named chef of the year by the Gault & Millau guide, then received his first Michelin star. In 2012, the guide granted him a second star. In 2014, the Mirazur took eleventh place in the San Pellegrino ranking of the world's best restaurants - and first position for France. Mauro Colagreco's cuisine celebrates Mediterranean influences. Bold and very personal, it is a cuisine without boundaries, between garden, mountain and sea.
« First, lavender is like a little sunshine that my grandmother used to keep in cupboards to make the linen smell fresh, and under the pillows 'to chase nightmares away'. A feminine, subtle, fragrant little sunshine that lit up the night. A distilled memory in the heat of my childhood summers... Today, its lovely flowers flavour dishes with the purple melody of a Provençal landscape and the sparkling constellation of the Mediterranean. »
